Good morning peeps! Just got out of bed while resisting the urge to get back under the cozy sheets. Do you know that feeling when the room is still under shadow, the bed so soft and everything is hush and cool? It’s mornings like these that make you want to sleep in. Nonetheless, the alarm rings and the thought of fresh waffles is enough to get me out of bed.

Ever since I was a kid waffles have been one of my favorite breakfast food. On one occasion, I was crying my eyes out after undergoing a series of medical injections so as a sort of reward my parents treated me to golden brown waffles. They knew that once I saw the paper bag that they left by my chair I would know what was inside (from many other past waffle trips). With my eyes wet with tears, I reached out for the little take out box that was still warm and unraveled the wrapper. Immediately, I calmed down preoccupied with the scent of vanilla and started spreading the whipped butter that would cover each crevice. Miraculously, the tears had stopped replaced by my concentration of the task at hand. Before I knew it, every crispy fluffy bite was consumed and I was likewise comforted.

These Easy Vegan Golden Brown Waffles (Light and Crispy) remind me of the ones I would have as a child albeit more vanilla-y and toasty. My family is a big fan of anything tostado so that’s how I make them. I love biting into the shatteringly crisp exterior and arriving at the soft fluffy cake within. Moreover, everyone was shocked when I told them these were vegan because they taste so buttery and rich!

How to Make Your Best Batch of Waffles

If you’ve ever had trouble with waffles breaking apart, spilling out the sides or getting extremely burnt, these tips are for you. With practice comes ease and a few tricks under the belt never hurt when it comes to creating stellar waffles. I picked these up serving up waffle orders on the fly and they saved me much stress during busy work days.

Firstly, start with a clean waffle maker devoid of past crumbs. This makes it less likely for waffles to stick to the pan and prevents random burnt bits from combining with the new waffle. If you see that your waffle iron has some residue, make a mixture of cornstarch and water, pour into the hot iron and leave to cook. Once it starts to harden, you can remove the cornstarch “waffle” which picks up all the scraps. If you’re a visual person, you can skip to the end of this highlight and watch the process. I also do this after cooking to make sure everything is clean for next time.

Secondly, is to heavily grease the pan and make sure it’s hot. I like to use a pastry brush dipped in butter to nealty coat BOTH the top and bottom irons. It gives the waffles a beautiful golden crust and a good crisp exterior. You can also use olive oil or another neutral tasting oil if you can’t use butter. (if vegan, use plant based butter)

Lastly, do not overfill the pan and avoid lifting the cover to check for doneness. Start pouring the batter from the center and use a spoon to nudge it to the edges then cover and then wait. The last thing you want to do is to take a peek causing you to split your waffle in half. You will know when it’s done once the steam starts to dissipate. That’s when you can slowly lift the cover and release your golden brown waffle.

Now that you’ve got everything down, you’re ready to make waffle history! Don’t worry if your waffles are a bit wonky or maybe they squidged out of the pan a little. No matter what, they’ll taste amazing and there’s nothing that can’t be fixed with a drizzle of melted chocolate.

Ingredients

  • 64 g (¾ cup) oat flour*
  • 64 g (½ cup + 2 tsp) all purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • pinch of ground cinnamon ,optional
  • pinch of ground nutmeg ,optional
  • 75 g (5 tbsp) melted vegan butter*
  • 180 mL (¾ cup) plant based milk ,plus extra just in case (see recipe)
  • 36 g (2 tbsp) maple syrup/agave/honey
  • 1 tsp vanilla extract

Instructions

  • Place oats in the blender and grind to make oat flour (skip this step if you already have oat flour). Place the rest of the ingredients into the blender and mix until everything is combined and there are no more large clumps of flour. Set aside for about 5 minutes to thicken slightly.
  • Meanwhile, plug in your waffle maker. Heavily grease* the waffle irons (both sides) with a pastry brush to coat all the nooks and crannies.
  • Once the waffle maker is hot and ready, pour in the batter then gently spread it to the edges. Avoid overfilling. Once the steam dissipates, remove the waffle and repeat the process with the rest of the batter. If the batter gets too thick, add a splash of milk and mix. Serve waffles while hot with a pat of butter a¾nd maple syrup. Enjoy!

Notes

*Make oat flour by measuring the same amount of rolled oats and blending to a fine powder
*You can replace the all purpose flour with ¾ cup oat flour to make this gluten free.
*Can substitute the vegan butter with olive oil or refined coconut oil. 
*I prefer to grease the waffle iron with vegan butter but you can also use olive oil or another neutral tasting oil.
